It’s no secret that I’m a BIG FAN of Chocolate Covered Katie’s cooking and this No-Bake Peanut Butter Pie is no exception.
I’ve had this pie pinned on my A Little Bit Of Health By My Side Pinterest board for some time and thought it was about time I gave it a try. Afterall, what’s the point of pinning if you’re never going to use it?
The No-Bake Peanut Butter Pie is a raw vegan pie who’s main ingredients are banana and peanut butter (PB).
The Big J is a major fan of PB (and I don’t mind me some PB fudge gelato on treat night either – major yum!) so I thought this pie was a winner. The Big J didn’t enjoy this pie as much as the Chocolate Berry Truffle Pie (also by Chocolate Covered Katie. Side note, frozen cherries are amazing in this pie) as he found the flavour to be too banana-y and not enough peanut butter-y…
I on the other hand, am totally enjoying this pie.
Making the pie I used 4 bananas and 1 1/2 cups of organic PB. Maybe next time I might try a bit more PB and see if that satisfies The Big J’s PB craving.
I teemed it with Chocolate Covered Katie’s Ridiculously Easy Chocolate Pie Crust and a vegan chocolate sauce. I did substitute almonds for the cashews in the base and I also soaked the dates and almonds in boiling water before making the crust. About an hour before serving, I removed the pie from the freezer to soften the filling.
What did I learn from this recipe? Two things:
- The Big J likes a STRONG PB flavour so don’t try and pass off a hint of PB as PB flavoured, and
- My food photography still has a lot of opportunities for growth 🙂
