Please excuse all of the sugary sweet treats I’ve been making lately but there have been a few celebrations, and it’s just hard to celebrate without sugar (oh I wish I had the willpower to though lol!). Our latest celebration (my birthday – ooh I’m getting so old…) required a cake of course. Although The Big J offered to buy one from the Cheesecake Shop I really wanted to make my own so I knew what was in it. I may be having a sugar hit, but I still wanted to avoid as many preservatives as possible.

I ummed and ahed over what type of cake I wanted – mud cake, sacher torte, sponge, mocha, black forest? So many choices but I eventually decided on a Chocolate Fudge Cake.

The dense consistency of this Chocolate Fudge Cake is reminiscent of a mud cake, while the fudgy icing can only be described as nom nom nom…

CHOCOLATE FUDGE CAKE RECIPE
INGREDIENTS
  • 125g butter, softened
  • 2tsp vanilla extract
  • 3/4 cup castor sugar
  • 4 eggs, separated
  • 1 cup self raising flour
  • 200g dark chocolate
  • 1/2 cup plain greek yoghurt
CHOCOLATE FUDGE ICING
  • 200g dark chocolate
  • 1/2 cup cream
  • 1 1/2 cups soft icing sugar

Grease and line a 22cm round spring form pan. Pre-heat oven to 175ºc.

Cream butter, vanilla and sugar in small bowl with electric mixer until light and fluffy. Beat in egg yolks one at a time taking care to not over-beat the mixture before adding the sifted flour and yoghurt.

Melt chocolate and fold through the mix. Beat egg whites in a small bowl until soft peaks form then gently fold through cake batter.

Pour mixture in to prepared pan and bake in preheated oven for 40-45 minutes.

Allow to cool slightly before turning on to a wire rack to cool completely. Top cold cake with Chocolate Fudge Icing.

ICING

Melt chocolate then mix together with cream and icing sugar. Allow to cool slightly then cover entire cake. I had some icing left over which I folded through 1/2 cup whipped cream for an extra treat on the side.

    Ooh this looks so moist and delicious! i especially like the sound of the icing – almost good enough to eat on it’s own (although I definitely shouldn’t!) 😉

      OMG Rachel – we always make extra icing in our house! The icing is very similar to a chocolate fudge that I make too nomnomnom…
